Speed controllers- how many channels?

I'm currently finding components for my first antweight, and I'm not sure what I should do for an ESC. As I understand it, my two best options are either the Vex 29 https://www.rapidonline.com/vex-29-type ... er-70-6329 (single channel) or Das Mikro https://www.banggood.com/1S5A-Micro-ESC ... rehouse=CN (dual channel). I'd like to know the differences in building and driving between two singles and one double. I'm not too worried about price (within reason), but of course weight is important.

It might be worth noting that I'm planning to have some sort of servo-based weaponry, and I don't know if that'll require another ESC all of it's own.

Servos don't need speed controllers because it's essentially built into the motor's electronics, you just connect the power and pwm line (from rx or other device)

And the motors used by spinners are usually brushless rc plane motors which need their own special controller, so you can't use a brushed controller (like Dasmikro).
